My new cookbook revives and updates toaster cakes of the ‘60s to gluten-free, low-carb, refined-sugar free—but keeps them just as tasty.  
 

It all started when I asked an old friend, “Remember those corn toaster cakes when we were kids?” 

That led to an animated conversation that inspired this renaissance of the toaster cake. A lifelong baker and professional writer, I combined these two talents to update and expand this recipe in my new cookbook Wake Up to Toaster Cakes.

I began by researching the original recipe, but every version I found called for heaps of butter, sugar, whole eggs, and wheat flour. Well, of course they tasted great! The real challenge in baking comes when you want to make something delicious and healthy!

I took that challenge and created 37 new gluten-free, low-carb, no-refined-sugar recipes, such as Lemon Blueberry, Orange Cranberry, Almost Buckwheat Pancakes, Spicy Chai, and Wild Oats Toaster Cakes. Savory flavors include Rosemary Onion, Boston Brown Bread, and Irish Soda Toaster Cakes. And you’ll have a complete breakfast in hand with Ham & Cheese Toaster Cakes.

I tested all recipes to make sure they weren't just good for you—but also tasted good. Life's too short to eat gruel in the name of healthy. One of my must-have ingredients is joie de vivre

A little backstory
I became disenchanted with gluten-free recipes when I realized that many gluten-free ingredients are loaded with empty calories and carbs from potato starch, tapioca starch, white rice flour, to name a few. Without all those lightweight ingredients, gluten-free baking can be tough—literally and figuratively. Muffins and rolls fail to rise and end up gummy in the middle. But the shape of toaster cakes—flatter, wider—virtually eliminates gumminess since the oven heat reaches more surface area and even gets into the center. Toaster cakes are so forgiving!

By using a combination of flours—almond, flax, whey, oat—plus stevia powder and unsweetened almond milk, I was able to keep the carbs low (just 7 per cake) and increase the protein (6.5 per cake).  And these recipes work just as well with two egg whites as one whole egg, resulting in virtually no cholesterol. And to make these toaster cakes vegan, simply use egg substitutes and replace the whey powder with pea powder or soy flour.

Not a baker? I made sure the ingredients are easy to find in grocery stores or online. I also tested and retested to ensure recipes were easy to make. And for anyone who doesn't want to invest in the ingredients before giving toaster cakes a try, I developed a Quick-Start Toaster Cakes Recipe. This recipe shows how to make toaster cakes with ingredients you likely already have in your pantry.

Wake Up to Toaster Cakes also features splurges (in keeping with my joie to vivre philosophy) for added ingredients such as chopped apricots, currents, nuts, and flaked coconut. I've also experimented with spreads that stick to my healthy parameters, and I've included 13 of my favorite recipes.

 

Not just for breakfast, toaster cakes are perfect for coffee breaks and afternoon tea. And savory toaster cakes are good any time of day. They brighten a bowl of soup for lunch and make a tasty dinner roll—no matter what your diet. And hey, if you don’t have to watch what you eat, you’ll still love them. No harm in saving some carbs or cholesterol—that just means you can smear them with more butter and jam!
